WHere is a home-style version of a drink found on the seasonal menu. It's a batch prepared mix that is loaded full of tastes of the Christmas time, making it ideal for a holiday party. Any leftover citrus syrup for morning drinks, puddings, or to make additional servings of this cocktail.
The Bikini Cocktail
Yields 10 guests
To make the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Citrus Syrup: Combine the listed ingredients inside a pan, bring to a light boil, agitating to dissolve. After that, take off the heat and leave to cool entirely. Decant to a sterilised bottle, seal and refrigerate it chilled, it can be stored for around a month.
Preparing the Premix: Pour all the liquids in a large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, making it completely strained.
For serving: Measure 85ml of the premix into a cocktail shaker filled with ice, and stir lightly for one minute to cool it down. Filter to a chilled martini glass or similar, decorate with some cranberries and finish by giving it a quick spritz of the essential oil above the glass.
